Woo!! It’s Wednesday! Time is flying while I am home in Arizona and I am soaking up this next week before I head back to Chris and the pups in Savannah. We have been cooking a lot of our meals at my mom’s house which is helping me stay on track this vacation. ”What I Ate Wednesday” helps for accountability too

Egg+egg whites scrambled with spinach and some cheese. A Van’s protein waffle with PB and half a grapefruit. Starbucks Via iced coffee on the side.
LUNCH
Mom, Emmie, and I hit up one of my favorite restaurants in Phoenix, Babbo Italian Eatery. They always serve fresh bread with olive oil and balsamic. My mom and I decided to split the pasta martini: penne served with creamy marinara, vodka, chicken, artichokes, garlic, and kalamata olives. YUM.
DINNER
After a heavier lunch we were in the mood for a light and healthy dinner. I made my mom, step-dad, and I salad beasts. In the beast was kale, romaine, spinach, chicken, boiled eggs, tomato, avocado, peppers, broccoli, cucumber, and carrots. I had mine with a spoonful of roasted red pepper hummus and some balsamic vinaigrette. We also had sweet potatoes on the side.
FITNESS
I took the last two days as rest days. My legs were pretty tired and needed a break. Back to the gym today! I am thinking a run and lifting weights for shoulders and legs. Also need to get some core work in

I was just thinking of finding some small muffins to toast for PB this week to help satisfy my PB/Bread cravings – I’ll have to be on the look out for Vans!

I love the simplicity of your breakfast, and it looks delicious! Cooking my own meals, even on vacation, does help me stay on track, too. I love WIAW for all of the food inspiration. Wishing you the best!

All your meals look so good.. especially that pasta
**My body is pretty good about telling me it needs a rest day. I’ll be real fatigued and my legs/ankles will be sore.

I always judge when to take rest days based on how my legs feel too – when they feel heavy and sore, I take the day (or two!) off!
