Thought you guys escaped me today did you? Haha nope! I am just running a tad late over here today. I have my microbiology final this morning and was up late/early studying. I had to get to post, drop Emmie off at day care, and get to the education center by 8:30. Needless to say it was a whirlwind morning. I am happy to say that I got what I needed to keep my A in the class and I am SO thankful that this is behind me. Micro was my last pre-req to apply to grad school and I am stoked to be DONE. I am even more stoked that today is Wednesday, meaning it’s time to link up with Jenn from Peas and Crayons for another What I Ate Wednesday!

Eggs scrambled with spinach and nutritional yeast topped with salsa. Some berries, a piece of bacon, and 1/2 a Rudi’s organic whole-wheat English muffin on the side. Hot coffee with pumpkin spice creamer to warm the soul.

LUNCH
I had another evol burrito because it was fast, tasty, and easy. I had to maximize my time to study while Emmie was napping yesterday. No time to cook but there was time to microwave
DINNER
Last night we had our company FRG meeting. For non-mil folks, a FRG is the “Family Readiness Group” which is there to support the Soldiers and their families. I am the leader for ours so I had to run the meeting. We did a pot-luck last night with tons of delicious looking food. Everyone ate while I talked about new business and I grabbed food while they did the team building activity. There were no plates (or forks) left and little food so I had a bowl of random: chili, lasagna, rice, and beans. Dinner of champions?
Today is another seriously busy day. I have a video teleconference tonight with all the other FRG leaders in our brigade and the meeting is supposedly lasting 2.5 hours. Sigh.
What’s your “go to” thing to bring to pot-lucks? I am a big fan of anything in a crock-pot
