WIAW + Pretty in Pink Juice

You know those nights where you are just a “to do” list checking off beast? That was me last night. I felt like super mom. Chris had CrossFit on post (more stuff to come on this!) and I knew he wouldn’t get home until after Emmalyne’s bedtime. From 4PM on I rocked out. I baked oatmeal for breakfast for all of us, prepped dinner, made a salad for my lunch tomorrow, prepped Em’s lunch for tomorrow, fed Em, bathed Em, put her to bed, grilled steak for our Chipotle bowls, and cleaned up the kitchen. BAM. When Chris got home the kitchen was clean, dinner was ready, and I was smiling. Pretty sweet deal if I do say so myself
Any-who, today is Wednesday so it’s time for another “What I Ate Wednesday” with the lovely Jenn of Peas and Crayons. AND I have a fun juice recipe for you too!
OMG. This breakfast was amazing. I fried some eggs, put them on toast, and crackled the bacon on top. Amazing. Fresh fruit on the side.
LUNCH
Heather texted me when I was at the gym and we decided the baby (hers) wanted Uptown Deli. This is one of my favorite lunch spots in Richmond Hill. I picked up both our lunches on my way home and dropped hers off before hurrying to get Em down for a nap. I got a chicken salad sandwich on multigrain and some Baked Ruffles on the side
DINNER
I made a roasted chicken for dinner and it was the perfect amount of juiciness. We also had roasted red potatoes and bacon wrapped asparagus on the side. I scored major brownie points with the boys on this one
SNACKS
Homemade trail mix again! I love this stuff. I’m addicted
I also used my new juicer to make an amazing pink juice. So amazing, I am sharing it with you
You’re welcome.
1 pomegranate (or 1/4 cup juice)
1 red grapefruit
1 orange
1 honeycrisp apple
**Juice in that order to maximize the amount of juice you get
Today I start volunteering at the ER in the hospital with some of the Physician Assistants to get some patient care hours for my PA school application. I am stoked! It also means though that Em is going to be in child care two days a week on post. More on this topic soon but wish us luck today

Wow that sounds like a super productive afternoon! The pink juice looks so fresh and delicious and I love how the bacon wrapped asparagus is so simple yet stunning – I bet my boy would be very happy if it was on his plate!

All of your meals look delicious!
Except, the other day I thought I was being sooo thrifty when I was buying the ingredients, and the cashier punched in the code for my dried cherries – upwards of $11!!! If I hadn’t scooped the up from the bulk bin and bagged them myself, I would have said, “put those back!” Next time I think I’ll choose raisins
