WOO! It’s Thursday which means that I only have today and tomorrow left of training
I am wiped out from these classes (they make you really evaluate yourself and your core values) and then from also being mom and wife. For you working mamas I know this is old news but for me it was a reality check. It’s weeks like this though that I value having healthy, easy options that are ready to go in a minute for Em.
On normal weeks, I hit the gym in the morning, run errands, and get home with just enough time to feed Em lunch before it’s nap time. Some days I have less time than others and I have to have lunch ready in a flash. Nothing dictates HURRY like a hangry (yes, hungry … hungry + angry) toddler

For Em, I like to mix the brown rice with a protein, seasonings, and veggies. For this lunch I used low-sodium turkey, tomatoes, and spinach. I also love to add mushrooms, peas, kale, parsley, avocado, black beans, you name it! I just mix it all together, sauté it in olive oil, and it’s ready. Em gobbles it up which makes me a happy mom. Ooh, yes, most days we have a hangry toddler in our house by lunch time too. Love your creative combo- looks delish! I agree- making brown rice the traditional way is ideal, but moms need short cuts.

Those little bowls are post workout lifesavers for me! I am a huge fan, and I think the convenience factor alone makes them worth every penny. Plus there is constantly coupons for them in the paper, which I love love love!!
