Happy Wednesday friends! I am excited that we are halfway through the week …. long days of training means a tired mama
I have been learning so much in this resiliency training and I am super excited to share some of it with you soon! Chris is doing something exciting this week too that I also can’t wait to share. Any-who, I have actually had to prepare my eats this week since I am in class all day long. Good thing it’s time for What I Ate Wednesday with Jenn from Peas and Crayons (who just made a HUGE and exciting announcement!!).
BREAKFAST
A favorite weekday breakfast! Baked apple cinnamon oatmeal, fresh fruit, and iced coffee. I made the oatmeal over the weekend for fast and healthy breakfasts this week as we are trying to run out the door.
SNACKS
Being in a classroom all day means that I had to pack enough snacks. I brought a Larabar, veggies with hummus, and homemade trail mix.
LUNCH
UGLY photo. I made a burrito with brown rice, black beans, shredded chicken, corn, and taco seasoning. I topped it with guac and salsa.
DINNER
I got home with just enough time to whip together dinner. I stuck with a family favorite of lasagna rolls. YUM.
My Sunday meal prep really came in handy this week with my snacks and meals. I now realize that whenever I get into graduate school this is how it’s going to work for me! Love it.

Food prep really seems to be key to eating healthy! I prep all of my food on Sunday, haul it to school, and then am able to cook up a portion of soup or what have you whenever I’m hungry. Without food prep I’d basically starve with lack of viable options

I try and plan it all out over the weekend as that’s when I do my weekly shopping but you always have to be prepared for emergencies, like yesterday, it’s snowed all day and I left work early, stop at the Thai restaurant to pick up some dinner, it went into the fridge then was ready in seconds when the husband didn’t get home till about 6:30 last night.

Packing healthy snacks and prepping ahead of time always helps me eat healthy when I’m on the go.

Those lasagna rolls look yummy! I try to prep our meals as much as possible, since it seems to keep us eating healthy.

OMG LASAGNA ROLLS! My mom makes these for me every time I visit and I miss it so so so much. Mine are good but its never the same as moms! You’re a mom… you should make me some =) haha!
Ooh! and if it makes you feel any better I lived off of french fries for a good month or two there… though I couldn’t seem to convince the hubs to bring them to me daily. The nerve!
Wow all of your food is right up my street. Especially breakfast, I am a breakfast addict. That mug is gorgeous, simple and lovely.
I agree with you planning and preparing is the key to eating well on a busy day. I plan all my meals for week nights so I don’t get tempted to eat something silly after work!
I always avoid those oatmeal bakes because they take forever but think I might try to make them on the weekend for the week! Such a great idea!
In high school I could prep more food for the week, and it was better what i do now.

I always see great pictures of Lasagna rolls but forget to make them. We love lasagna but hate the prep. I need to remember to make some! I’m obsessed with carrot sticks right now. I actually think I might be starting to have an orange glow from the amount of carrots I’m eating lately! Ha!

I have to admit that I usually cave to healthy eating when things are crazy. But I try to grab something good like a sandwich or chipotle burrito bowl with only healthy stuff. But it is so easy to just grab junk instead.

My family always give me weird looks when they catch me dipping my burrito into Guac;) I just love it that much.
The baked oatmeal looks amazing- do you have a recipe for that?
And prepping definitely ensures that I eat healthy. I just need to do it more often!
