Growing up with a single working mom meant that my mom had to learn how to maximize her time in order to keep our little family running between her work schedule and my tennis practices. One of the ways she did this was by keeping our freezer stocked with dinners for the week.
When I was pregnant with Emmalyne my mom flew out to Missouri to be there for the birth. While we were waiting on Em mom and I got busy in the kitchen stocking our freezer just like she did when I was growing up. It was one of the best decisions ever! While I felt great and was back to cooking dinner the week after having E it was nice to have 1-2 meals a week that were already prepped and ready to go.
So it’s been on my “to-do” list this pregnancy to make sure we have some meals stocked for our transition to a family of four.
If you follow me on Pinterest you might have seen me pinning some ideas on my Freezer Meals board. I mixed up my list with some new to us recipes as well as some of our tried and true favorites. I also didn’t go overboard since I hope to be back to preparing fresh meals pretty quickly … it’s part of how I get us to our new “normal”. This is what I made:
Chipotle bowls (2)
Mom’s Spaghetti (3)
Lasagna Rolls (1)
Chunky Beef Stew (2)
I also have ingredients on hand to make the following:
Frozen chicken breasts
To make things easy (and husband proof), I wrote the directions on the freezer bags as I was filling them. This way we don’t have to find the recipe to know how to cook each dish. Easy peasy
I also froze the bags flat in the freezer to maximize the amount of bags that could occupy the space. We are lucky in that we have an extra refrigerator in the garage so running out of room isn’t an issue for us.
I feel really good having some options for us on hand. I plan on using my freezer meals when I start graduate school in January too for 1-2 meals a week to keep my time in the kitchen short and my time with my family long. Katie and Kelly also have some great freezer meals posts to check out!
