Weekly Meal Plan

Happy Monday friends! I hope you had a great weekend and enjoyed your Valentine’s Day! Chris and I went out to dinner in Savannah on Saturday and I can’t wait to share about that with you guys this week! This is our LONGEST and hardest week of the quarter with FIVE tests over the course of the next 7 days. I have 2 today, 1 tomorrow, 1 Friday, and 1 next Monday. Needless to say it’s study-central over here 😉 One of the ways I am prepping for the week is my having my meal plan ready to go and what food I can already done.
Here is what’s on the menu for this week:
Monday: Lasagna Rolls (from freezer)
Tuesday: Pasta Fagioloi
Wednesday: Sneaky Meatball Subs
Thursday: Crockpot Chicken Taco Chili
Friday: Whole Chicken + Roasted Veggies
I prepped food over the course of the weekend and got the following done:
- Ground beef for the soup
- The meatballs made for subs
- Chicken shredded and brown rice for the taco chili
- Vegetables chopped for roasted veggies
- Chicken taco lettuce wraps for lunch
- Apple cinnamon baked oatmeal for breakfasts.
Seriously though friends – if you haven’t taken to meal planning yet, what’s keeping you?! It is the only thing keeping healthy food on our table for dinner each night 😉
