Weekly Meal Plan

Long time no talk my friends!  I am still getting the hang of the balancing act that is my life.  My number one priority is my family followed very closely by school.  Last week those two things took up every free second and the blog comes third.  I missed you guys though and am excited to be back today :)

 

One of the things that has really helped us as I have started school is the fact that I meal plan.  Many of my classmates are starting to find out that without a plan in place it can be REALLY hard to throw together healthy dinners on our busy days.  While we have had our share of take-out nights, I am happy to say that about 90% of the time we stick with the plan and have healthy meals on the table even though Chris and I are super busy.

Meal Prep

This week I did a substantial amount of prep yesterday because the next 8 days are probably the craziest days of my quarter.  I have a test this morning, a test Friday, and then 3 tests next Monday.  AHHH.  Therefore I knew coming into this week that every extra second I had at night after tending to the family needed to be dedicated to studying and spending a lot of time in the kitchen was out of the question.  Here is what our meal plan looks like:

 

Monday: Slow cooker chicken noodle soup

Tuesday: Citrus glazed pork tenderloin + roasted veggies

Wednesday: Crockpot Chicken Taco Chili

Thursday: Turkey and Kale Rice Bowls

Friday: Grilled Pizza

 

To gear up for the week I did the following:

  • Made the chicken noodle soup and have it in the CrockPot ready to plug in
  • Made the chicken taco chili and put it in a freezer bag
  • Cooked up brown rice for both Wednesday and Thursday
  • Chopped vegetables for roasting
  • Washed/cut fruits and veggies for snacks
  • Made apple cinnamon baked oatmeal for breakfasts

 

I feel SO much better going into a crazy week knowing that we are good to go on the meal front.  I can now focus all my time and energy to things that matter more … snuggles with two sweet girls and learning learning learning!  Hope you have a happy Monday!  Fingers crossed this test goes well today :)

    Food preparation does save a lot of time and make me less stressful in busy days. Your baked apple cinnamon oatmeal looks delish! I have now put it in my weekly meal plan for next week. Thanks for sharing!
