WIAW Breakfast


Good morning!  Are you guys excited that it’s Wednesday?  I am!  Especially this week since my daddy flies in tonight.  We have a special ceremony for PA school on Friday and my dad gets to be a part of it due to being a doctor.  I am so excited to get to share this memory with him and introduce him to his newest granddaughter.  For those of you that have been following my blog for awhile – he has fully recovered from his heart surgery and is at 100%!  :)


Since it’s Wednesday and it’s been awhile I thought I would share a What I Ate Wednesday post with you guys :)  Thanks to Jenn of Peas and Crayons for hosting!

Lately I have been trying to get up early and get a strength workout in before class on Mondays and Tuesdays.  To go along with that and to jumpstart my morning I have a big glass of ice water with lemon essential oil.

After my workout I took a quick shower and began prepping our breakfast.  Yesterday’s was an egg scrambled with mushrooms and spinach, chicken sausage, and fruit.  A healthy dose of caffeine on the side 😉

Throughout the morning I had a couple of snacks at school but didn’t get a chance to photograph them.  We have limited time between classes so normally I am running to pump, fill up my water bottle, and eat a snack as fast as possible.  At lunchtime my friends wanted to go to the deli next to campus and there’s no way I could turn that down.  I got my favorite Rueben sandwich which I had missed over break.





I don’t get out of class until 5:30PM and have about an hour commute home due to traffic so before leaving the parking lot I snuck in a quick snack.  I am LOVING these Stonyfield organic Greek yogurts in caramel.  The perfect amount of sweet – it could almost be a dessert.  The best part?  They are also low in sugar!

Dinner last night was a quick one.  Chris got home late so the casserole I had prepped wouldn’t be ready in time.  So we put that on the back burner for another night and picked up a rotisserie chicken from Publix and some baked beans.  I also cooked up a package of Alexia potatoes and veggies and we called it a night.





I am off to get a good workout in before studying until class.  Hope your Wednesday is fantastic!

  1. I’ve never heard of putting lemon essential oil in water – great idea! I’ve heard of the benefits of lemon water in the morning, but usually I’m rushing out the door and don’t feel like chopping a fresh lemon to add to my water.
