Oh hey there Wednesday … excited that you’re here! Thanks for all your love on yesterday’s post on pumping at work. I am glad it helped so many of you! We have another round of interviews today for the next class at my PA school. As an ambassador for the program I will be on hand to give tours and answer questions from the applicants. It’s a super fun “job” and I can’t wait to get up there! Since it’s Wednesday though I thought it would be fun to link up with Jenn for a “What I ate Wednesday” post since it’s been AGES since I played along.
I’ve been doing really well lately and have been getting up early enough to make myself breakfast. This was eggs scrambled with spinach and mushrooms, nitrate free bacon, and fresh fruit. Plenty of iced coffee on the side.
Another planning win for the week. Chris and I grilled a bunch of Greek marinated chicken on the weekend and roasted broccoli and sweet potatoes. I instantly had lunches packed for the week.
Long days of class definitely call for some bite-size chocolate. My small group leader has a constant supply in her office and she is fueling my sweet tooth.
I snack a lot throughout the day so this is just some of my snacks. I ate the apple after lunch and the pita crackers with hummus while cooking dinner. Oh look … more chocolate. This was my dessert after dinner … dark chocolate covered pomegranate seeds. NOM.
Dinner was an old favorite … oven-baked chicken tacos. I shredded the chicken over the weekend so all I had to do was mix it up on the stove and pop it in the over. From fridge to table in less than 15 minutes.
There you have! My eats from yesterday. I am trying hard to clean them up a bit and I am feeling pretty good about how this week is going. Fingers crossed I can keep it up! Have a happy Wednesday friends
