Baked Apple Cinnamon Oatmeal

I have been posting about my baked apple cinnamon oatmeal on “What I Ate Wednesday” for the last couple of weeks and now I am ready to share the recipe with all of you. I know you’re mouth is watering in anticipation
I seriously love this stuff. I make a tray of it on Sunday and keep it in the fridge for quick and healthy breakfasts throughout the week.
I love using the Publix pack of mixed raisins. The different sizes and flavors add a little more flavor in my opinion. This stuff is seriously a lifesaver for a busy mom and working dad. On days where I have to be to the hospital for volunteering Em and I leave the house no later than 7:30. Since I let her sleep until 7 this is the perfect ready to serve breakfast for her. Chris will also pre-porition out his breakfast the night before so he can grab it on his way out the door to enjoy after PT. The whole family is happy and full.
I haven’t tried it with a flax egg to make it vegan yet. If anyone does let me know! I am interested to see how it works
I have also put this bad boy in the freezer and it still tasted great. I just pulled out the portion I needed the night before and let it defrost in the fridge before warming it up in the morning. Baked apple cinnamon oatmeal will remain on my Sunday prep list for the foreseeable future
Baked Apple Cinnamon Oatmeal

Prep Time: 5 minutes
Cook Time: 50 minutes
Ingredients (6 servings)
- 2 cups oats
- 1 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- 1/2 cup raisins
- 2 tablespoons Stevia (for baking)
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon ground flax
- 1 tablespoon chia seeds
- 2 cups diced apples
- 1 egg
- 1/3 cup egg whites (4 whites)
- 1 cup unsweetented coconut milk
- 1 cup water
Instructions
Preheat oven to 325 degrees.
In a large bowl, mix together the oats, baking powder, salt, stevia, cinnamon, nutmeg, chia seeds, and flax. Stir in the apples and raisins and set aside.
In a small bowl, whisk together the egg and eggs whites. Add the coconut milk, water, and vanilla. Pour over the dry mixture and stir to combine.
Pour everything into a glass 7x11in baking dish or an 8x8in baking dish. Cook for 50-55 minutes or until golden brown.
*I make this on the weekend and store in the fridge for easy and fast breakfasts during the week! It also freezes great.

Happy Wednesday folks! I am in full-on party planning mode over here but have been a little under the weather the last couple of days. Chris and I both woke up with sore throats on Monday and they haven’t quite gone away. BOO. As long as it is gone by Saturday I am good to go. Being Wednesday and all means it’s time for another What I Ate Wednesday with the lovely Jenn of Peas and Crayons greatness … who was also in the Huffington Post for her savory pumpkin basil cheesecake spread! Congrats lady ![]()
I love how this month is all about Halloween and breast cancer awareness. Baller.
BREAKFAST
An egg and egg white scramble with salsa, fruit, and a pumpkin spice Eggo. You heard that right … a pumpkin spice eggo. BOMB. A cup of iced Starbucks coffee on the side flavored with pumpkin creamer. Double pumpkin = double fun!
LUNCH
I had leftover chicken tortilla soup for lunch because it was the only thing that sounded decent. Luckily for me it is and was delicious. I want to make this every single day.
DINNER
I am still holding a bit on to summer and made blackened fish tacos with tilapia. Seriously yummy.
Overall it was a pretty tasty day of eats … cold and all. Hope you guys have a great hump day

WIAW … Fall Is Here!

Thanks for all your comments on my recap of the Squash for Josh 5K! It was a fun race and definitely supports a great cause. It kind of cracks me up that it was my first 5K race since I have run 2 (soon to be 3) half marathons! This week is already going by so quickly … I can’t believe today is Wednesday! I am joining in on the “What I Ate Wednesday” party this week with my fall eats thus far. Thanks Jenn for hosting!
BREAKFAST
Since it is now officially fall I can safely consume massive amounts of pumpkin without facing judgement by Chris. I made my first batch of pumpkin oatmeal this morning. I use Coach’s Oats, pumpkin, 2 egg whites, chia seeds, flax, and spices. It was delicious and fluffy.
WORKOUT
I got my run on at the gym and did 4.5 miles. Emmalyne wasn’t having it in child care so I cut my workout short and headed home to put her down for a nap. While she snoozed I did a back/biceps super set workout in the garage that is on my Instagram.
LUNCH
Lunch was a staple for me … a turkey sandwich on Rudi’s whole wheat bread with spinach, cheese, and mustard. I shared a peach with Emmie too and had a handful of Popchips.
DINNER
Dinner was seriously out of this world. I made sausage and mushroom packets with ricotta and phyllo dough. It was husband AND Emmie approved. Definitely going to be making these (and variations) frequently!

Is it just me or is this week flying by?! I think it’s because I have a ton going on? I have a midterm in my Microbiology class tomorrow and I have been using every single spare moment to study … so if I disappear tomorrow you know why
It’s been awhile since I linked up with the lovely Jenn of Peas and Crayons for “What I Ate Wednesday” and I am pretty excited to be back! Woo!
A Rudy’s organic whole-wheat with flax English muffin, scrambled eggs, and peaches The perfect way to start the day!
RUN
Emmie and I did a 4.5 mile run through the neighborhood and boy was it humbling! It has been awhile since I pushed her any distance by myself and I definitely felt it.
LUNCH
I made a salad with chicken, tomatoes, 1 slice of bacon, a little cheese, and buffalo ranch dressing. Healthiest salad ever? No. Delicious salad? Absolutely.
SNACKS
My snacks weren’t the healthiest choices either but they also weren’t the worst. I had a pumpkin cookie (or two), some Popchips, and ended the night with some Yogi detox tea.
DINNER
Beef and Guinness stew with a puff pastry. I am trying to force it to be fall here. Is it working yet??

WIAW … Travel Edition

HELLO from sunny Arizona
Emmalyne and I made it safely here late last night. She was seriously a dream to travel with. Some of the other little ones on the plane … not so much. I felt so bad for their parents because I know how hard that can be! Since it’s Wednesday it’s time to link up with the wonderful Jenn from Peas and Crayons for “What I Ate Wednesday”! I love these posts and love reading everyone else’s food choices. It gives me some inspiration for meal planning!
Emmie and I shared some scrambled eggs, fruit, and a whole wheat English muffin with strawberry jam.
WORKOUT
I was able to sneak to the gym for a quick sweat session before finishing packing and heading to the airport. I did 4.5 miles on the treadmill following Tina’s intervals for Best Body Bootcamp. I finished in 40:38 for an average of 8:58 per mile! I didn’t walk once. I am seriously so shocked that I am finally breaking into the 8′s
LUNCH
Heather brought over lunch from What’s The Scoop here in Richmond Hill … AKA our favorite place ever. It was seriously JUST what I needed since I was stressing trying to get everything together. We got to hang out for her lunch break and then I got down to business.
SNACKS
These GNC lean protein shakes are my absolute favorite post-workout snack now. They are so easy because I just throw them into my gym bag and they are immediately ready for consumption. If I wait until I get home sometimes Emmie needs me more and I don’t get a snack in. These have solved that problem. I also had an iced grande non-fat chai tea latte at the airport. Mama needed caffeine

Here’s where things got interesting for me. We got in to Detroit (our connecting flight) LATE. And our next gate was on the other side of the airport. We didn’t have time to stop for food but we did have time to sneak into the Freedom Center for military and their families. They were AWESOME. They heated me up a hot pocket, packed me a snack bag, and the gentlemen helped me get to my gate. They saved my booty. If you’re ever at the Detroit airport they are in terminal A! Healthy dinner? No. But it was better than nothing
