Happy Monday friends!  I hope your favorite college football team made it to a bowl game this year.  Football season is a big deal here in our house.  One of my favorite ways to spend a Saturday or Sunday afternoon is surrounded by our friends watching the game.  Not because I particularly love watching all the games but rather love the camaraderie and the food that comes with it.  The other weekend we had one of our football viewing days and I was in charge of the snack plate, which is a task I particularly love.  Why?  Because then I get to make EXACTLY what I want.

I decided to keep it fairly simple.  Fortunately, Blue Diamond had JUST sent me some of their to-die-for almonds which was perfect for the day!  I paired them with a simple cheese and cracker plate and Jenn’s baked seafood dip with crab, shrimp and veggies.  Which you HAVE to make like yesterday.  AMAZING.

 

I had some happy-snackers on my hands.  The dip is cheesy, seafood, goodness.  That I could eat the entire bowl.  The Blue Diamond almond flavors I got were the Smokehouse and Wasabi & Soy.  The Smokehouse are a particular favorite of mine and find their way into my lunch box frequently.  SO much flavor!

Best Pocket Sized Snacks

One of the biggest things that I have had to figure out on my OB/GYN rotation is how to find time for a quick snack in the mornings.  On Internal Medicine we always had something in the morning that provided me time to get in some food.  I need something mid-morning to keep myself going since I eat breakfast at 5:30AM and don’t get lunch until closer to noon.  What is a girl to do?  Figure out snacks that fit in my white coat of course!

Lately I have been sticking to the above snacks and for good reason.  They all give me enough energy to last through the morning and keep my stomach from grumbling in patient’s rooms!

 

1.  Blue Diamond Almonds – I have been loving mixing the dark chocolate with the oven roasted sea salt for a sweet-and-salty combo.  I simply fill up my 21 Day Fix container and keep it in my white coat pocket so in the few minutes I get between patients I can pop a few in my mouth.  The protein keeps me full and the container keeps me from eating my weight in almonds 😉  I’ve also gotten my attending hooked on the dark chocolate ones!

2.  Larabars – I recently tried this coconut chocolate chip flavor and love it.  I am not always a fan of coconut but I like this flavor even better than the coconut pineapple one from Wednesday.  Again, there is a lot of protein in these which keeps my metabolism going and my stomach happy.

 

3.  Babybel Cheese – I really like how rich the flavor is with these little cheese wheels and I like the calorie content even more.

 

4.  Apples – I pre-slice my apples since the slices make for easier munching.  More often than not I combine the apple slices with some of my almonds for a more well rounded snack.

 

So far these snacks have been working well for me and I am glad I know that since I have Emergency as my next rotation and having quick snacks on hand is the only way you eat in the ER!  Happy Saturday friends :)

WIAW

Happy Wednesday friends!  Anyone else a tad thrilled that it’s already halfway through the week?!  I somehow managed to take photos of all my eats yesterday just in time for What I Ate Wednesday with Jenn!  I am feeling pretty good about how my eating has been going.  Meal prep has gone well and I have actually been sticking to my plan.

I managed to make a really good breakfast – a whole wheat English muffin, scrambled egg, thinly sliced cheese, and a slice of nitrate free bacon.  Iced coffee + coconut milk creamer on the side!

We had a break between patients so I snuck to the lounge to study a bit and have a good snack.  Sliced apples and Blue Diamond dark chocolate almonds.  Perfect balance to get through the rest of the morning.

Lunch was grilled Greek chicken, steamed broccoli, and 1/2 a sweet potato.  Side of berries for a touch of sweetness.

I picked up this seasonal Larabar this past weekend and am glad I did.  I loved the hint of pineapple but the texture of the coconut wasn’t my favorite.  Still a good overall flavor!

Dinner was from the freezer – Alexia roasted vegetable medley and a parmesan crusted tilapia.  Love having both of these on hand for days that get out of control.

 

There you have it!  A complete day of eats :)  Off to a busy day of call with my OB – we will be taking care of any acute OB/GYN patients so it should be interesting!

Game Changing Snacks with Blue Diamond

Is anyone else sad that football season is about to come to a close?  While I am hugely disappointed that my Packers didn’t make it to the big game I am still excited to watch it since it’s being played at my home!  While I enjoy watching games throughout the season I have to admit … I do it mainly for the food –  #NoShame.   However I have to admit that most of the time my choices are less than stellar.  So when Blue Diamond offered me the chance to team up for healthier game day snacks you KNOW I was all over it.

Blue Diamond sent me two new-to-me flavors to try.  I am OBSESSED with the smokehouse.  In fact, I am thinking it would be the perfect addition to my beloved BBQ chicken salads.  The wasabi & soy sauce would be an excellent combination for an almond-crusted fish.  When it comes to healthy snacking though, these nuts are a great option to have on hand!

Almonds are full of amazing nutrients, are an excellent source of protein, and are a fantastic healthy fat to include in your diet.  Not to mention they are heart healthy!  Almonds are my “go to” throughout the day when I need a pick-me-up and they make a regular appearance as my driving home from school snack.  Therefore, having them for the big game sounds like a great idea!

 

In the meantime I am planning our recipes for our game day.  Here are a few other ones I am thinking about making to go with our Blue Diamond almonds.

Outshine Fruit + Veggie Bars

Thank you for all the well-wishes for Emmalyne’s birthday! The Outshine Fruit & Veggie Bars combine real fruit, fruit juice, and vegetables with coconut water into a delicious bar.   In fact, each bar is at least 25% vegetable which is right up this mom’s alley.  While we try to eat whole foods as much as possible, these bars are  great alternative for a healthier treat.  They are great sources of Vitamin C and have no high fructose corn syrup which sets them apart from other options.

I tried the Tangerine Carrot flavor first and loved how refreshing and crisp the bar was.  It was sweet without being overpowering and definitely hit the spot.  Since summer is holding on by a thread here in Savannah these bars are nice on a warm afternoon.

The real test however came when I let Emmalyne have one to try.  I let her choose which one she wanted and she went with the Blueberry Medley.  What did she think?  I think pictures speak louder than words on this one:

Her exact words though were “it’s so delicious!”.  I think that means she likes it.  We steer clear of most frozen treats but these are ones are a keeper in our house!  I am not going to give up trying to bring this girl back to the land of vegetables but in the meantime I am going to get them in however I can!
